Quarantine Recipe Reveal


Here is the inside scoop on some different photography I take from time to time. Aside from traveling, cooking is the new adventure I'm trying while we're all cooped up in quarantine. There's a few things I love cooking repeatedly, and I just so happen to enjoy photographing them while I'm at it. Sharing is caring right? So here you go...

The Tasty Time Killers: these are not only some of my favorite recipes, but some of the best "activity" recipes to enjoy with a full bottle of wine, quality time with your co-chef, something different to do while dancing alone in the kitchen, change up from Netflix or to fill in a long day without any other plans... Enjoy!

1. Sweet Potato Gnocchi + Brown Sugar and Sage

Ingredients:

- 2 large or 3 medium sweet potatoes

- 2 cups gluten free flour

- 1 egg

- 1/2 tsp sea salt

- butter

- brown sugar

- sage

Directions:

- place sweet potatoes in a large pot and cover with water.. bring bowl to a boil, cover and reduce heat, and simmer for 15-20 minutes or until tender

- remove from heat, drain, transfer to a large bowl, and mash until smooth.. let cool to room temperature

- once cool add the egg, 1 cup flour and salt to the mixture

- knead until dough is smooth then add remaining flour as needed to form dough thats neither sticky nor crumbly

- bring a large pot of salted water to a boil

- while waiting for water to boil, roll chunks of dough into long snakes, about the width of your thumb.. cut each snake into one inch pieces and press both sides with a fork

- when the water boils slide the gnocchi into the water.. when they float to the surface strain and remove them and place them into a heated pan

- begin to heat a pan on high with butter and place gnocchi inside

- cook gnocchi on both sides until golden brown.. add brown sugar and sage in pan before entirely golden

2. Salty + Sweet Pizza Night

Ingredients:

- 1 bottle tomato sauce

- 1 pear sliced

- 1 red bell pepper sliced

- 1 red onion sliced

- 1 steamed broccoli chopped

- 1 buffala mozerella

- 2 types of salami

- 2 garlic cloves chopped

- 1 bag shredded mozzarella cheese

- 2 pizza doughs (homemade, bought, whatever you state you prefer)

Directions:

- spread thin layer of sauce on all pizzas

- salty pizza = two types of salami, red onion, garlic, buffala mozerella then sprinkle shredded mozerella on top

- sweet pizza = pear, red onion, garlic, buffala mozerella (optional add pine nuts + spinach) then sprinkle shredded mozerella on top

- veggie pizza = broccoli, pepper, red onion, garlic, buffala mozzarella then sprinkle shredded mozerella on top

- bake one at a time at 180 C

- 10-12 minutes

3. Lasagne

Ingredients:

- 1 box of lasagne pasta

- 1 garlic clove

- 1 onion

- concentrated tomato paste

- canned chopped tomatoes

- bio veggie broth cube

- creme fraiche

- 500g ground beef

- mozerella cheese

- salt, pepper, oregano into sauce as preferred

Directions:

- burn ground beef in pan

- add garlic and onions into pan with beef

- then add broth cube, tomato paste, and finally canned tomatoes.. mix all together plus preferred spices

- grease the baking pan with olive oil and begin layering

- first layer is the meat sauce.. then thin layer creme fraiche.. then layer of pasta.. repeat 2 more times

- topped with creme fraiche and mozerella cheese

- preheat over to 180 C

- bake for 35 minutes

4. Chocolate Chunk Banana Bread

Ingredients:

- 3 spotty/brown bananas

- 3 eggs

- 1/3 cup melted butter

- 1/3 cup maple syrup

- 1 1/2 cup gluten free flour (packed)

- 1 1/2 tsp cinnamon

- 1 tsp baking soda

- 1 bar milk or dark chocolate (3/4 inside, 1/4 on top)

Directions:

- bake at 350 F

- mash bananas first

- add in all wet ingredients

- mix in dry ingredients

- pour mix into loaf pan/s

- top with chocolate

- bake for 40-55 minutes

* personally I prefer mine under-baked so I aim for 40 mins

5. Paleo GF Chocolate Chip Cookies

Ingredients:

- 3/4 cup coconut flour

- 2 eggs

- 3 tbsp coconut oil

- 1/2 cup maple syrup

- 1/4 tsp baking soda

- 1/8 tsp of salt

- 4 tbsp water

- 1 bar 50-80% dark chocolate

- (optional) 1 big spoon of almond/peanut butter

Directions:

- mix together all ingredients

- roll into small balls

- bake at 175-200 C

- 18-20 minutes

6. Peanut Butter Marshmallow Cheerio Treats

Ingredients:

- 3 tbsp unsalted butter

- 1 10oz package of marshmellows

- 1/2 cup peanut butter

- 6 cups Cheerios

Directions:

- lay down cooking sheet or grease cooking tray with olive oil

- melt the butter in a large pot over low heat.. once butter has melted, add marshmallows and stir until marshmallows have melted

- remove mixture from heat and stir in peanut butter and cheerios until they are well coasted

- transfer the mixture to the prepared pan, press it to a thin even layer

- let it cool to room temperature, cut into squares and enjoy!
