
Anybody else seriously brain buzzed and totally stressed out over the election today? Well, I am no #foodinfluencer but I sure as hell have a couple of golden go-tos up my sleeve for times like these. From comfort food to carbs that don't count and all the other goodness in between, look no further. It started back in early quarantine when I posted my ultimate date night recipe reveal for those nights you just need to turn off and reconnect over a good bottle of wine and some quality carbs. Here we are again, stressed in a whole new way, looking for a place to bury our worry. So what's the temporary solution if you're not a marathoner and still locked in quarantine? Drum roll, please... OATMEAL CHOCOLATE CHIP WALNUT COCONUT COOOOKIES! Yes, the capitals are necessary because the stress levels are high, the name is so long, and the taste is too good. So, it deserves a little noteworthy announcement. Boom shaka lakas is the vibe I'm feeling if I ever decide to trademark this badass recipe. But in the meantime, here is the full recipe:
I am an eyeballer because I currently live in a foreign country and don't have any measuring cups, nor do I like to follow directions (sorry, not sorry). So try it my way, loosen up a little, and toss it all in without any concern what the exact amounts look like.
Ingredients:
1 cup butter, softened
1 cup maple syrup
2 eggs
2 tablespoons oat milk
2 teaspoons vanilla extract
1 cup coconut flour
1 cup almond flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups gluten-free oats
Chocolate chips (this is a mood portion - aka however much your pretty little heart desires)
1 cup crushed/chopped walnuts
1 cup coconut flakes or shredded coconut
Directions:
Preheat oven to 375 degrees F or 190 degrees C
Wet ingredients first - cream together the butter, maple syrup, eggs until smooth.
Then stir in the milk and vanilla.
Combine the flours, baking soda, and salt, stir into mixture until blended well.
Stir in the oats, chocolate chips, walnuts, and coconut until evenly distributed.
Roll into balls on a baking sheet, and press in a piece of chocolate on top if you're in need of a little extra lovin' today...
Bake for 12 minutes or longer depending on your chewy to crunchy preference.
BOOM SHAKA LAKA they're ready!
