Like I said before, this is not the start to my #foodinfluencer takeover, but this is another one of my golden go-to recipes that puts the comfort in quarantine. Here we are in March of 2021 still staring at the clock, waiting for covid's expiration date to arrive. One positive that's come out of this whole pandemic dilemma has been the ability to perfect this banana muffin recipe! And the best part, its freakishly healthy! So, without further a due...
3 browning bananas
1 cup almond butter
1/4 cup honey
1/2 cup chopped walnuts
2-3 tbs chia seeds
1 tsp baking soda
1 tbs vanilla
1 tbs cinnamon
1/2 tsp salt
Optional - chocolate (in my case, I put a piece of milk + white chocolate on top of each)
Preheat oven to 200 degrees C or 400 degrees F
Wet ingredients first - blend together the bananas, almond butter, eggs, and honey until smooth.
Then stir in the chia seeds, baking soda, vanilla, cinnamon, salt, and chopped walnuts.
Once fully stirred together, pour into cupcake holders and top with a piece of chocolate in each.
Bake for 10 minutes or until the tops are browned.
